What is Modified Atmosphere Packaging?
Modified Atmosphere Packaging (MAP) is a process by which atmospheric gases are replaced by a predetermined gas mix designed to extend the stability of a food product and increase its shelf-life.
Key gases used in MAP:
- Oxygen – Kept as low as possible to limit aerobic bacterial growth, lipid oxidation, and staling
- Carbon dioxide – The most important gas for limiting the growth of microorganisms
- Nitrogen – An inert (non-reactive) filler gas used to displace oxygen (this process is known as nitrogen flushing)
Why Package Testing is Critical
A critical quality control (QC) step to verify successful modified atmosphere packaging is to test sample packages on an ongoing basis—both directly off the production line and over time during storage.
